The World's Best Kebab Recipe

Do you want to make homestyle chicken kebabs that are Better than, cheaper than, easier than, and quicker than what you would get at a gourmet restaurant? Then you may want to try this recipe out. This is the world's best kebab recipe that I got from my mom. Certified by me. There is no need to take my word for it, just try it out yourself!

You will need

500 g chicken breast chopped into inch sized pieces

Marinade the chicken  overnight (a large mixing bowl with a cover helps) and refrigerate with the following mixed together.

Ginger garlic paste 1 tbspn
Green chili paste 1 tbspn  (I used a generous tbspoon of very spicy sikkim dalay chilis, 7% of which by default disappeared in the kebab, so you can step up on this depending on your taste.)
Salt 1 tspn (generous teaspoon)
White pepper powder 1 tbspn
Jira and dhania powder mix 1/2 tspn (you can do without it too)
Curd 1 tbspn (i used three cups, and used the remaining marinade as basting sauce)

Next day, add

Roasted besan (lightly in a dry pan) 1 tbspn
1 egg (i used 2)
Grated cheddar (1/2 cup) (i used 1 cup)
Coriander leaves 1 large fresh bunch, chopped fine.

and mix and cover and let it stand for 1 hour.

Preheat at 250 for 5 min.  Ensure drip tray is in place.

skewer kebabs (like you would sew with a mattress stitch) and rack them up, turn heat down to 200, and roast (both top and bottom heaters on) for 20 minutes, turning as frequently as feasible, basting with the marinade,

Serves 4.
